I came upon this recipe the other day while making a new entree for dinner. It was designed to go atop a bread-crumb-coated-and-sauteed chicken breast, but it would go well almost anywhere. We used it on fajitas last night and it worked well.
Tomatillo Salsa 10 whole tomatillos, small 1/2 c cilantro, chopped 1/4 c onion, coarsely chopped 1 clove garlic 1/2 to 1 serrano pepper (any type of chile pepper could work here, but if you use a really spicy one use a lot less. Hungarian pepper is another good one) 1 tablespoon lime juice dash salt
Boil a medium-size pot of water. Put in tomatillos, pepper and garlic. Cook for about seven minutes. Drain vegetables and rinse with cool water. Place all ingredients in food processor and pulse 7-8 times or until coarsely chopped (if you want a thinner salsa, run longer). Chill, if desired. Goes good with tacos, burritos, on salads, and with tortilla chips.
