Office banana-split parties are the embodiment of evil. I just wanted to say that.
The other day I was working from home and so I went to my regular gym instead of the dank little room in the basement that passes as the office gym. I have to say, it was very nice. Open, bright, with TVs and magazines - I did 40 minutes easy on the elliptical and I could have done 10 more if I hadn't needed to go out and do some errands. I'm going to try and sneak out early so I can go again today. I felt really energized coming out of that gym. Whereas when I come out of the office gym I just want to get OUT because it's been so long, and I've been in that building all day. But whatever.
Apartment front...still trying to get someone to rent it from us...only problem is, we can't sublease. The most we can do is add their names to the lease and then hope they pay the rent and don't stick us with it. I'm visiting with a lawyer on Tuesday to see about getting something drawn up that will basically lock them into paying the rent and absolve us of all responsibility. However, we just need to FIND someone first. Two women have come to see it and one acted like she was really interested...so I e-mailed her today to ask if she's applied and all that. Nothing. And I know she answers her e-mail regularly because we e-mailed back and forth like crazy the other day setting up a time for her to see the place. But nothing. I haven't even tried the second woman. Two others are coming this weekend so let's hope it works out.
One woman even e-mailed me and told me that she wanted the place, but she "has had some credit problems in the past" and is "still struggling with past debt." Umm, yeah, sure. Let's sign you up. No really, I'm willing to take the risk that you might get saddled with a huge credit card payment one month and won't be able to pay rent. Really. People are weird, huh?
I normally don't post recipes, but this one came out so good that I had to. Tastes just as good as (or better than) regular meatloaf, with tons less calories. From Shape magazine.
Mozzarella-Stuffed Turkey Meatloaf
Ingredients
1 1/2 lb ground turkey
1/2 c seasoned bread crumbs
1/2 c diced onion
1/4 c chopped parsley
1 10-oz pkg frozen chopped spinach, thawed and squeezed to remove any excess water
2 egg whites
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
4 oz shredded part-skim mozzarella cheese
3 tbsp mustard
3 tbsp ketchup
Procedure
Preheat oven to 375. Combine ground turkey, bread crumbs, onion, parsley, spinach, egg whites, oregano, salt and pepper in a large bowl, using awooden spoon or your hands. Press half of the mixture evenly into an 8-inch loaf pan. Top with mozzarella cheese. Press the other half of the mixture on top of that, making sure it's even. Combine ketchup and mustard in a separate bowl and spread over the top of meatloaf.
Bake 1 hour uncovered, until top of loaf pulls away slightly from edges of loaf pan and top is golden. Wait 10 minutes and serve. Makes 6 servings.

Oh, yeah, I have a blog. So sorry I haven't been updating. Things have been...well...not good around here. Well, I shouldn't say things are BAD; I've just been really busy and updating hasn't been foremost on my mind. Every weekend Mark either comes home or I go up there, so I never am just sitting around doing nothing on a Saturday afternoon. Then there's the whole big process of looking for a job, turning down a job that paid slave wages, and looking for someone to take over the lease at our Austin apartment. (By the way, if anyone needs a 2-bed, 2-bath in a good location in Austin, e-mail me. Soon.)
I've been maintaining, sadly. With the exception of a week where I ate almost nothing and lost 3 pounds, the scale hasn't budged. But I'm on a real health kick lately - trying to incorporate more fruits and veggies - so if I keep that up, I should see some loss soon. Last night I ate soup and salad for dinner and it was lovely. I'm really trying to get more fiber and vitamins into my body, for both weight loss and general health.
So, that's where I'm at. This morning I had a cup of yogurt and a tiny granola bar. So I'm on track. For now.
